Soft and chewy peanut butter cookies filled with chocolate chips and mini Reese’s peanut butter cups. The cookies are also rolled into a mixture of granulated sugar and ground cinnamon. Giving these cookies a sweet snickerdoodle cookie flavor. Everyone will love these tasty cookies filled with tons of chocolate and peanut butter flavors.

The cookie dough is started like a classic peanut butter cookie dough, then the chocolate chips and mini Reese’s peanut butter cups are folded into the cookie dough. Then the cookie dough is rolled into balls, and rolled into a mixture of granulated sugar and cinnamon. Place the cookies onto a large baking sheet and bake until they are fully cooked through. Let the cookies cool completely on a cooling rack before serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini Reese's peanut butter cups
  • 1/2 cup chocolate chips
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy.
  • Add in egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the peanut butter cups and chocolate chips.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll each ball into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
