Chicken Tortilla Soup
Ingredients
- 2 tablespoons olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 pound chicken, cooked and diced
- 1 ( 10 oz.) can rotel
- 1 ( 15 oz.) can corn, drained
- 1 ( 15 oz.) can black beans, drained
- 1 ( 15 oz.) can diced tomatoes, undrained
- 4 cups chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 5 corn tortillas, sliced
Instructions
- Heat olive oil in a large saucepan over medium heat. Cook onion and garlic until fragrant. Add in the remaining ingredients.
- Cook until everything is heated through.
