Chicken and dumplings are a classic comfort food meal. It is so warm and comforting, with the chicken, carrots and celery and of course the dumplings. The dumplings are a basic drop biscuit dough that cooks right with everything else. These chicken and dumplings are the perfect cold weather meal that won’t take long to make. This recipe uses cooked shredded chicken, you can either cook chicken breast and shred it or you can also use already cooked rotisserie chicken for it as well.

The chicken and dumplings is started with a soup mixture made by first cooking the vegetables in melted butter over medium heat. The carrots, onion, celery and minced garlic should be softened. Add flour and cook it for a minute. Then add in the chicken broth along with milk, cooked chicken and the seasonings. Let this mixture cook over medium heat while whisking constantly for about 10 minutes.

Meanwhile you can make your dumpling dough by whisking flour, salt, baking powder and milk in a medium bowl. You can use either a spoon or a cookie scoop to drop the dumpling dough into the chicken mixture. I prefer to use a cookie scoop because it ensures that all of the dumplings are all the same size. Cover the mixture and let the dumplings cook for about 15 minutes. When the dumplings are done, they should come out clean with a toothpick.

Ingredients
  

  • 1 pound cooked shredded chicken
  • 4 tablespoons butter
  • 2 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 1 large onion, diced
  • 3 stalks celery, diced
  • 4 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

Ingredients for Dumplings

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup milk

Instructions
 

  • Melt butter in a large saucepan over medium heat. Cook garlic, carrots, onion and celery until the vegetables are softened.
  • Add in flour and cook for a minute to brown. Add in the shredded chicken, chicken broth, milk, salt, pepper, dried basil and dried oregano. Let simmer for about 10 minutes.
  • For the dumplings, in a medium bowl whisk together flour, salt, baking powder and milk. Using either a cookie scoop or a spoon, drop dumpling batter into the chicken mixture.
  • Cover and let simmer for about 15 minutes, until the dumplings come out clean with a toothpick.
