Cherry Stuffed Snowball Cookies

Buttery and sweet classic snowball cookies, each one stuffed with a delicious juicy cherry. Snowball cookies are a classic around the holidays, because once they are rolled in powdered sugar, they look like snowballs. These easy cookies make the perfect dessert for Christmas or Valentine’s day. Everyone will love the fun surprise in each cookie.

The cookie dough is made like a classic shortbread cookie dough, then they are rolled into balls, and each one is slightly flattened. Place one stemless cherry onto each piece of dough. Roll the cookies into balls, covering the cherry completely. Place onto a large ungreased baking sheet and bake until the bottoms are lightly browned. Once the cookies are baked, roll each one into a mixture of powdered sugar. Let cool completely on cooling racks before serving.

Cherry Stuffed Snowball Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • Marachino cherries
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine butter with powdered sugar until fluffy. Add in flour and vanilla extract, and mix until it is fully combined.
  • Roll the cookie dough into balls, and flatten each one slightly. Place one cherry on each piece of dough. Roll the cookie dough into a ball, covering the cherry completely.
  • Place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes. Place the powdered sugar into a shallow dish. Roll the baked cookies into the powdered sugar.
