Chewy chocolate brownies topped with a soft and chewy oatmeal cookie dough filled with dried cherries. These easy brookie cups are sweet and delicious topped with a chewy oatmeal cookie dough. It combines both classic desserts, a cookie and a brownie to make into one delicious that everyone will love.

The brownie batter is quick and easy to make with all of the ingredients mixed into a large mixing bowl until smooth. You can also use a boxed brownie mix instead if you would rather. The cookie dough is made like a classic oatmeal cookie dough, with the addition of dried cherries folded into the cookie dough. Divide the brownie batter into a lined muffin pan and top each one with the cookie dough. Bake until each cup comes out clean in the center. Let cool completely on a cooling rack before serving.

Cherry Oatmeal Brookie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dried cherries

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract until smooth.
  2. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  3. Add in the flour mixture, and mix until it is fully combined. Fold in the dried cherries.
  4. Evenly divide the brownie batter between the prepared muffin pan. Add the cookie dough on top of each brownie batter. Bake for 20-25 minutes.
