Cheesy and creamy mashed potatoes with spinach mixed into the potatoes. It is then baked covered with shredded cheddar cheese. These mashed potatoes make the perfect healthy side dish to add to any meal. Adding spinach into the mashed potatoes is a great and delicious way to add in vegetables into your diet. These potatoes also make a great make ahead dish, you can prepare the mashed potatoes up to topping with cheese and baking. Then keep it refrigerated until you are ready to serve, then top with cheese and bake as usual.
/The mashed potatoes are started with boiling peeled and diced russet potatoes until they are fork tender. Drain the potatoes and mash with the cooked spinach, butter, milk, salt, pepper and garlic powder. You can mash these potatoes with either a potato masher or a hand mixer. Spread the mashed potatoes out into a large greased baking dish. At this point you can cover and refrigerate until you are ready to bake. When you are ready to cook the mashed potatoes, sprinkle shredded cheddar cheese on top and bake until the potatoes are heated through and the cheese has fully melted.
Cheesy Spinach Mashed Potatoes
Ingredients
- 3 pounds russet potatoes, peeled and diced
- 1 ( 10 oz.) box frozen chopped spinach
- 1/2 cup butter
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350 F. Peel and dice potatoes and place into a large saucepan, cover with water and bring to a boil over medium heat.
- Let simmer for 15-20 minutes, until the potatoes are fork tender. Drain and place potatoes into a large bowl. Cook frozen spinach according to package directions and mix with potatoes.
- Mash potatoes and spinach with butter, milk, salt, pepper and garlic powder. Mash until smooth. Spread potato mixture out into a large greased baking dish. Sprinkle with shredded cheddar cheese. Bake for 20-25 minutes.
