Cheesecake Brownie Bites

Cheesecake and brownies are two of the most classic desserts that everyone loves. With these cheesecake brownie bites, you get to enjoy both your favorite desserts in one. Brownie batter and cheesecake batter are combined in a muffin pan to create a sweet and delicious dessert with all of the flavors of chewy chocolate brownies, and a sweet and creamy cheesecake. Make these easy treats anytime you can’t decide between your two favorite desserts. 

The brownie batter is fast and easy to prepare, all of the ingredients are whisked together in one bowl. To save on time, you could also use a boxed brownie mix instead. For the cheesecake batter, cream cheese is mixed with sugar, an egg, and vanilla extract until smooth. Evenly divide both batters into a greased muffin pan. Swirl the two with a knife and bake until it comes out clean with a toothpick. 

Cheesecake Brownie Bites

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Ingredients for Cheesecake

  • 8 oz. cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking powder. Add in eggs, melted butter, and vanilla extract. Whisk until smooth.
  • In a large bowl using a mixer, beat softened cream cheese, sugar, egg, and vanilla extract. Beat until smooth. Evenly divide brownie batter between 12 greased muffin cups.
  • Add the cheesecake filling on top of the brownie batter, swirl with a knife. Bake for 12-15 minutes.
