Quick and easy snickerdoodle cookies using a box of carrot cake mix. These easy cookies are soft and chewy, with a delicious carrot cake flavor combined with a classic snickerdoodle flavor. They are perfect to bake for a easy five ingredient treat for Easter or spring.

The only five ingredients that you need for these cookies is a box of carrot cake mix, eggs, vegetable oil, granulated sugar, and ground cinnamon. In a large bowl, combine cake mix with eggs, and vegetable oil until smooth. Form the dough into balls, and roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

  • 1 ( 15 oz.) box carrot cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine cake mix, eggs, and vegetable oil until smooth. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Use a cookie scoop to form the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
