The cookie dough is made by mixing a box of carrot cake mix with eggs, vegetable oil and quick oats. Roll the cookie dough into balls and roll into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart and bake until they are fully cooked through.
Carrot Cake Mix Oatmeal Snickerdoodle Cookies
Ingredients
- 1 ( 15 oz.) box carrot cake mix
- 1 cup quick oats
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, oats, eggs and vegetable oil until smooth. In a shallow dish, combine granulated sugar and ground cinnamon.
- Roll the cookie dough into balls and roll in the cinnamon sugar mixture. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
