Cake Mix Watermelon Cookie Cake

Soft and chewy chocolate chip cookie cake made with a box of cake mix and made with pink food coloring. The cookie cake is also filled with chocolate chips and decorated with a delicious creamy buttercream frosting that is made green with food coloring. Everyone will love this easy cookie cake this summer.

The cookie cake is made by mixing a box of cake mix with eggs and vegetable oil until smooth. Then stir in pink food coloring. Fold in chocolate chips and press the cookie dough into a cake pan. Bake until the center comes out clean with a toothpick. Let cool completely before decorating. Mix all of the frosting ingredients together until smooth. Pipe frosting onto the cake and serve.

• 1 ( 15 oz.) box yellow cake mix
• 2 large eggs
• 1/2 cup vegetable oil
• pink food coloring
• 1 cup chocolate chips
• 1/2 cup butter, softened
• 3-4 cups powdered sugar
• 1 teaspoon vanilla extract
• green food coloring

Method

 

1. Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Add in food coloring and mix until it is fully pink. Fold in the chocolate chips.
2. Evenly press the cookie dough into a greased round 9-inch cake pan. Bake for 20-25 minutes. Let cool completely. In a large bowl, mix butter with powdered sugar and vanilla extract until smooth.
3. Add in the food coloring and mix until it is fully green. Pipe frosting onto the cookie cake.
