Soft and chewy snickerdoodle cookies for St. Patrick’s day. The cookie dough is made with a box of cake mix, and made with green food coloring. The cookies are filled with white chocolate chips and rolled in a delicious mixture of granulated sugar and ground cinnamon. They are perfect to bake this St. Patrick’s day.
The cookie dough is made by mixing the cake mix with eggs, vegetable oil, green food coloring and white chocolate chips. Roll the cookie dough into balls and roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until they are fully cooked through.

Ingredients
- 1 ( 15 oz.) box white cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- green food coloring
- 1 cup white chocolate chips
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs and vegetable oil until smooth. Add in the food coloring, and fold in the white chocolate chips.
- In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls and roll in the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
