Cake Mix S’mores Snickerdoodle Cookies

Soft and chewy snickerdoodle cookies filled with all of the classic flavors of s’mores. These easy cookies are started from a box of cake mix. They are filled with chocolate chips, graham crackers, and mini marshmallow bits. They are also rolled in a mixture of granulated sugar and ground cinnamon. Giving them a classic snickerdoodle flavor. These easy cookies make the perfect easy treat to bake this summer.

The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil. Chocolate chips, crushed graham crackers, and mini marshmallow bits are then folded into the cookie dough. Form the cookie dough into balls, and roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 (15 oz.) box white cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup chocolate chips
  • 1/2 cup crushed graham crackers
  • 1/2 cup mini marshmallow bits
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the chocolate chips, crushed graham crackers, and mini marshmallows. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Use a cookie scoop to form the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
