Cake Mix Peanut Butter Easter Snickerdoodle Cookies

Soft and chewy peanut butter cookies made with a box of cake mix and filled with fun Easter themed sprinkles. The cookies are also rolled in a mixture of granulated sugar and ground cinnamon, making them taste like snickerdoodle cookies. Everyone will love these easy and delicious cookies this Easter.

The cookie dough is made by mixing a box of cake mix with peanut butter, eggs, and vegetable oil until smooth. Fold in the sprinkles. Roll the cookie dough into balls and roll in a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet. Bake until they are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 1/2 cup peanut butter
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup Easter sprinkles
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, peanut butter, eggs, and vegetable oil until smooth. Fold in the sprinkles. In a shallow dish, combine the granulated sugar and cinnamon.
  • Roll the cookie dough into balls and roll in the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
