The cookie dough is made by mixing a box of cake mix with eggs, vegetable oil, and mint extract until smooth. Green food coloring is mixed into the cookie dough until it is fully green. Then fold in white chocolate chips. Press the cookie dough into a baking dish, and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, vegetable oil, and mint extract until smooth. Stir in the food coloring until it is fully green. Fold in the white chocolate chips.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
