Cake Mix Mint Chocolate Chip Oreo Cookie Bars

Soft and chewy cookie bars made with a box of cake mix and filled with mint flavors and chocolate chips. The cookie bars are also colored green with food coloring, and with crushed Oreo cookies mixed into the cookie dough. Everyone will love these easy soft and chewy cookie bars for any holiday or occasion.

The cookie dough is made by mixing a box of cake mix with eggs, mint extract, and vegetable oil until smooth. Add in the food coloring until it is fully green. Then fold in chocolate chips and crushed Oreo cookies. Press the cookie dough into a greased square baking dish, and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1 teaspoon mint extract
  • 1/2 cup vegetable oil
  • green food coloring
  • 1 cup chocolate chips
  • 1 cup crushed Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, mint extract, and vegetable oil until smooth. Add in the food coloring. Fold in the crushed Oreo cookies and chocolate chips.
  • Press the cookie dough evenly into a greased 8-inch square baking dish. Bake for 20-25 minutes.
