The brownie batter is made by whisking all of the ingredients together in a large bowl until smooth. Divide the brownie batter between a paper lined muffin pan. To make the cookie dough, all of the ingredients are mixed together in a large bowl. Divide the cookie dough over the brownie batter. Bake until each brookie cup comes out clean with a toothpick.
Cake Mix Mint Chocolate Chip M&M Brookie Cups
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 large eggs
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
- 1 ( 15 oz.) box yellow cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon mint extract
- green food coloring
- 1 cup chocolate chips
- 1/2 cup mint M&Ms
Instructions
- Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract until smooth.
- In a large bowl, combine cake mix with eggs and vegetable oil until smooth. Add in mint extract and green food coloring. Mix until smooth. Fold in the chocolate chips and mint M&Ms.
- Evenly divide the brownie batter between the prepared muffin pan. Top with the cookie dough. Bake for 20-25 minutes.
