Cake Mix Mint Chocolate Chip Cookies

Soft and chewy classic mint chocolate chip cookies made from a box of cake mix. These quick and easy cookies are simple to make, no mixer or butter is needed. All of the ingredients are mixed together in a large bowl until combined. They taste just like a classic chewy mint chocolate chip cookie. They are perfect to bake for any occasion.

The cookie dough is made by mixing a box of yellow cake mix with eggs and vegetable oil until smooth. Then mint extract, green food coloring, and chocolate chips are mixed into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine cake mix with eggs and vegetable oil until smooth. Add in the mint extract and green food coloring, mix until it is fully green.
  • Fold in the chocolate chips. Use a cookie scoop to place each cookie onto a large ungreased baking sheet. Bake for 10-12 minutes.
