These easy cookies are made like s’mores, with a fun St. Patrick’s day twist using the lucky charms in the cookies. Everyone will love these fun cookie s’mores for a St. Patrick’s day themed treat, or summer themed dessert.
To make the lucky charms cookies, a box of yellow cake mix is mixed with eggs and vegetable oil until smooth. Lucky charms cereal is folded into the cookie dough. Use a cookie scoop to place the cookies onto a large ungreased baking sheet. Bake until the cookies are fully cooked through. Remove half of the cookies from the baking sheet and set aside. Place one marshmallow, followed by some chocolate chips on each cookie on the baking sheet. Bake for just a couple of minutes, until the marshmallows begin to puff up. Remove from the oven, and sandwich with the remaining half of cookies.
Cake Mix Lucky Charms Cookie S'mores
Ingredients
- 1 (15 oz.) box yellow cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup lucky charms cereal
- marshmallows
- chocolate chips
Instructions
- Preheat the oven to 350 F. In a large bowl, whisk together cake mix, eggs, and vegetable oil until smooth. Fold in the lucky charms cereal.
- Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove half of the cookies from the baking sheet.
- Place one marshmallow along with some chocolate chips onto each cookie on the baking sheet. Bake for 2-3 minutes. Remove from the oven, and sandwich with the remaining cookies.
