Soft and chewy snickerdoodle cookies filled with crushed Oreo cookies and Easter themed sprinkles. These easy cookies, are made with a box of cake mix. It is quick and easy to make the cookie dough, no mixer is needed, just a large mixing bowl to mix the ingredients together. They make the perfect easy treat to bake for Easter or spring.

The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil. Crushed Oreo cookies and Easter themed sprinkles are mixed into the cookie dough. Roll the cookie dough into balls, then roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box white cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup crushed Oreo cookies
  • 1/2 cup Easter sprinkles
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the crushed Oreo cookies and sprinkles.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
