Cake Mix Earth Day Snickerdoodle Cookies

Soft and chewy snickerdoodle cookies made with a box of cake mix and with half of the cookie dough made green and the other half blue for Earth day. Everyone will love these easy soft and chewy cookies as a fun a simple way to celebrate Earth day this year.

The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil until smooth. Divide the cookie dough into two bowls, and mix green food coloring into one and blue into the other. Take a small amount of dough from each and roll together into balls. Roll the cookies into a mixture of granulated sugar and ground cinnamon. Place onto a large ungreased baking sheet. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • blue food coloring
  • green food coloring
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Divide the dough between two bowls and mix blue food coloring into one and green in the other.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Take a small amount of each cookie dough and roll together into balls. Roll in the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
