Cake Mix Cookie Bars

Soft and chewy sugar cookie bars made with a box of cake mix, and topped with a creamy and delicious homemade buttercream frosting and decorated with sprinkles. These easy chewy cookie bars make the perfect easy treat to bake for just about any holiday or occasion.

The cookie dough is made by mixing a box of yellow cake mix with eggs and vegetable oil until smooth. Press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let the cookie bars cool completely before frosting. To make the frosting, mix all of the ingredients together until smooth. Spread the frosting evenly over the cookie bars. Top with sprinkles, and cut into bars and serve.

Ingredients
  

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup butter, softened
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Evenly press the cookie dough into a greased 8-inch square baking dish.
  • Bake for 20-25 minutes. Let cool completely. In a large bowl, mix the butter with powdered sugar, vanilla extract, and milk until combined. Spread the frosting evenly over the cookie bars. Top with sprinkles.
