Cake Mix Chocolate Peppermint Snickerdoodle Cookies

Chewy chocolate cake mix cookies filled with peppermint extract and rolled in a delicious cinnamon and sugar mixture. The cinnamon sugar mixture gives these easy cookies a delicious snickerdoodle flavor. Everyone will love these easy chewy cookies for a easy treat that is perfect to bake this holiday season.

The cookie dough is made by mixing a box of chocolate cake mix, eggs, vegetable oil, and peppermint extract until smooth. Roll the cookie dough into balls, and roll each one into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

  • 1 ( 15 oz.) box chocolate cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon peppermint extract
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix with eggs, vegetable oil, and peppermint extract until smooth.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll each one into the cinnamon sugar mixture.
  • Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
