Cake Mix Butterscotch Snickerdoodle Cookies

Soft and chewy snickerdoodle cookies filled with butterscotch baking chips. These easy cookies are made from a box of cake mix. Everyone will love the delicious butterscotch and cinnamon sugar flavors. They make the perfect easy treat to bake for any occasion.

The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil until smooth. Butterscotch baking chips are folded into the cookie dough. Roll the cookie dough into balls, and roll into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup butterscotch baking chips
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, combine cake mix with eggs and vegetable oil until smooth. Fold in the butterscotch baking chips. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll the cookie dough into balls, and roll into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
