Soft and chewy cookie bars made with a box of cake mix and filled with chopped up Andes mints and white chocolate chips. All you need is five simple ingredients and just a few minutes to put these easy cookie bars together. Everyone will love the soft and chewy texture and delicious mint flavors.

The only five ingredients that you need is a box of yellow cake mix, eggs, vegetable oil, chopped up Andes mints, and white chocolate chips. Mix all of the ingredients together until smooth. Press the cookie dough into a greased square baking dish. Bake until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup chopped Andes mints
  • 1 cup white chocolate chips

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the chopped up Andes mints and white chocolate chips.
  • Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
