Butterfinger Stuffed Peanut Butter Cookies

Soft and chewy classic peanut butter cookies stuffed with a mini butterfinger candy bar. These easy cookies have all of the classic peanut butter cookie flavors with a fun crunchy surprise in each cookie. Everyone will love these chewy stuffed peanut butter cookies for any occasion.

The cookie dough is made like a classic peanut butter cookie dough, then it is rolled into balls, and flatten slightly. Place one butterfinger candy bar in each piece of dough, and roll it into a ball, covering it completely. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through.

Butterfinger Stuffed Peanut Butter Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • mini butterfinger candy bars

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, mix until it is fully combined. Roll the cookie dough into balls, and flatten each one slightly. Place one butterfinger candy bar on each piece of cookie dough.
  • Roll the cookie dough around the candy, covering it completely. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
