An easy cheesy burrito casserole with ground beef and refried beans. It has all of the flavors of a classic burrito, baked into an easy to prepare delicious casserole. Making burritos into casserole form is much less time consuming, because you won’t need to roll each individual burrito, making this dish perfect for feeding a crowd. Serve with your favorite tex-mex sides such as rice or chips and gaucamole.
For the ground beef mixture, ground beef needs to first be cooked in a large skillet until it is no longer pink. Drain the grease from the beef and return the beef to the skillet. Along with the packet of taco seasoning and refried beans. Cook the beef and bean mixture until the refried beans have heated through. Lay half of the flour tortillas down in a single layer in a greased baking dish. Place the beef and bean mixture on top and sprinkle with shredded cheddar cheese. Layer the remaining flour tortillas on top of the beef mixture and sprinkle the remaining cheese. Bake until the cheese has melted.
Burrito Bake
Ingredients
- 8 large flour tortillas
- 1 pound ground beef
- 1 ( 5 oz.) packet taco seasoning
- 1 ( 15 oz.) can refried beans
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350 F. Brown ground beef in a large skillet over medium heat, breaking it up with a spatula as it cooks. Drain grease and return the meat to the skillet. Add in taco seasoning and refried beans.
- Continue to cook over medium heat until the refried beans are heated through. In a large greased baking dish, place four flour tortillas. Place the meat and bean mixture on top of the tortillas.
- Sprinkle with 1 cup of shredded cheddar cheese. Place the remaining four tortillas over the beef mixture and top with the remaining cup of shredded cheese. Bake for 20-25 minutes.
