Soft and chewy chocolate brownie cookies covered in a sweet cinnamon sugar mixture. They have all of the classic flavors of a chocolate fudge brownies combined with a soft and chewy snickerdoodle cookie. These brownie cookies are made with a simple homemade brownie batter. The brownie batter is formed into cookies and rolled into a mixture of cinnamon and granulated sugar, giving these cookies a classic snickerdoodle flavor. They are perfect for just about any holiday or occasion.

The brownie batter is quick and easy to make, all of the ingredients are whisked together in a large mixing bowl until smooth. You can also use a boxed brownie mix to make the batter instead if you would rather. Combine granulated sugar and ground cinnamon into a shallow dish, and roll the brownie batter into balls, and roll into the cinnamon sugar mixture. Place them onto a large ungreased baking sheet at least 2-inches apart and bake until they come out clean in the center. Let the cookies cool completely on a cooling rack before serving.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in eggs, melted butter, and vanilla extract. Whisk until smooth.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Using a cookie scoop, roll the brownie batter into balls, and roll them into the cinnamon sugar mixture.
  • Place the cookies onto a large ungreased baking sheet. Bake for 10-12 minutes.
