Soft and chewy cookies made from homemade brownie batter. These quick and easy cookies are so simple to make, you just prepare a brownie batter like you would normally make for brownies. Then instead of pouring the batter into a baking dish, they are scooped onto a baking sheet, and baked like cookies. They are more soft than classic cookies, the texture is more similar to chewy fudge brownies than cookies. They make the perfect dessert for when you can’t decide between brownies and cookies.

The homemade brownie batter is quick and easy to make, all of the ingredients are mixed together in the same mixing bowl. You can also use a box of premade brownie mix instead if you prefer and prepare the batter according to package directions. Use a cookie scoop or two spoons, to place the brownie batter onto a large baking sheet. Bake until they come out clean with a toothpick. Let cool completely on cooling racks before serving.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda.
  • Add in eggs, melted butter, and vanilla extract, whisk until smooth. Using a cookie scoop, place the cookies onto a large ungreased baking sheet at least 2-inches apart.
  • Bake for 10-12 minutes.
