Waffles are a favorite of mine for lazy weekend breakfasts or brunches. These fluffy homemade waffles are made with fresh blueberries to make them even more delicious. The waffles are buttery and fluffy on the inside while being crisp on the outside. You can also freeze these waffles after the are cooked and cooled to enjoy any time you want fresh homemade waffles. Serve topped with butter and your favorite type of syrup.

The waffle batter is quick and simple to make. All you need is a large bowl and a whisk. The dry ingredients are all whisked together in the bowl, then the eggs, milk and butter are whisked into the dry ingredients until a smooth batter forms. I used fresh blueberries for these waffles, although frozen blueberries will work as well. Fold the blueberries into the waffle batter. Preheat a waffle iron according to the manufacture instructions. Once the waffle maker is hot, ladle waffle batter onto the hot waffle iron and let cook until it is cooked through and lightly browned.

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 1/2 cups milk
  • 1 pint fresh blueberries

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder and salt. Whisk in eggs, melted butter and milk until smooth. Fold in fresh blueberries.
  • Preheat a waffle iron according to directions. Ladle waffle batter onto the hot skillet and cook until waffles are lightly golden browned.
