Sandwiches are a great summer lunch or dinner because with the warmer weather, you don’t wan’t to heat the house up by using the oven or stove. Bacon, lettuce and tomatoes is one of the best sandwich combinations invented. All three of those ingredients go together so well. I love to make this sandwich any time of the year, but especially during the summer time because I can use lettuce and tomatoes fresh from the garden.
To cook the bacon, I prefer to bake it because there it is less messy than cooking it on the stove top. I bake the bacon in a lined baking dish at 400 F. for 15-20 minutes, depending on how thick the bacon is. You can also use leftover bacon to make this sandwich even quicker and easier to prepare. I toasted the bread in the toaster because I like the bread to be a little crunchy, although it still makes a great sandwich without it. Mayo is spread on the toasted bread slices and piled with lettuce, tomato slices and crispy bacon.
