Meatloaf is a classic comfort food meal, but adding barbecue sauce in the meatloaf makes this dish perfect for summer. This meatloaf is made like a traditional ground beef meatloaf with breadcrumbs and ketchup. But with barbecue sauce mixed into the mixture and on top of the meatloaf as a glaze. This meal is great to make any time of the year because it makes a great warm comfort food meal, but also has a summer taste with the barbecue sauce. Serve with a side of mashed potatoes and your favorite vegetables for a complete meal.

The meatloaf is made like a classic meatloaf with ground beef as the base. Onion and breadcrumbs along with some seasonings are mixed into the mixture. An egg to help the meatloaf hold it’s shape, worcestershire sauce, barbecue sauce and ketchup are also added into the mixture. Form this mixture into a loaf shape, then place it into a loaf pan. Bake for 30 minutes before spreading the remaining barbecue sauce on top of the meatloaf. Then bake for another 30 minutes until the beef is no longer pink. Let the meatloaf cool in the pan for a few minutes, so that it will hold it’s shape more.

Baked Barbecue Meatloaf

Ingredients
  

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 large egg
  • 1 tablespoon worcestershire sauce
  • 1/2 cup barbecue sauce
  • 1/4 cup ketchup
  • 1/2 cup barbecue sauce

Instructions
 

  • Preheat oven to 350 F. Grease a 9-inch loaf pan with non-stick cooking spray. In a large bowl, crumble ground beef and mix with diced onion, breadcrumbs, salt, pepper, garlic powder, onion powder, egg, worcestershire sauce, 1/2 cup barbecue sacue and ketchup.
  • Form meat mixture into a loaf and place into the prepared loaf pan. Bake for 30 minutes, spread the remaining 1/2 cup barbecue sauce over the meatloaf and bake for another 30 minutes.
