Baked chicken is my go to weeknight meal because there are so many different meals that you can make with chicken. For this chicken, it is coated in a garlic butter with a crispy ranch flavored panko bread crumb crust. The chicken is tender with a crispy crust. It has tons of flavor with very little prep work involved. The oven does all of the work, after you have breaded the chicken it is baked until it is tender and the chicken is no longer pink. You can have this meal on the table in less than one hour, making baked chicken perfect for busy nights.
The garlic butter is made by first melting some butter and placing it into a shallow dish, stir minced garlic into the butter. To make the crispy bread crumb crust, in another shallow dish, whisk together panko bread crumbs, and a packet of ranch seasoning mix. First dip your chicken in the garlic butter mixture, then fully coat both sides in the bread crumb ranch coating. Place the chicken onto a greased baking sheet and bake until the chicken is fully cooked through and the coating is crispy, no need to flip the chicken.
Baked Ranch Chicken
Ingredients
- 2 pounds chicken breast
- 1/2 cup butter, melted
- 2 cloves garlic, minced
- 1 cup panko breadcrumbs
- 1 ( 5 oz.) packet ranch seasoning mix
Instructions
- Preheat oven to 400 F. In a shallow dish, whisk together melted butter and minced garlic. In another shallow dish, whisk together breadcrumbs and ranch seasoning.
- Dip each chicken first in garlic butter mixture, then fully coat chicken in breadcrumb mixture. Place chicken into a greased baking dish. Bake for 35-40 minutes.
