Barbecue chicken is a classic summer meal. It is usually grilled, but instead of grilling the chicken, I decided to bake it. This chicken tastes great especially during the summer, but because it is baked it can be eaten any time of the year and in any weather. The chicken is tender and juicy, the perfect summer meal that can be baked or grilled. Serve with corn on the cob and your favorite summer pasta salad.
I chose to use chicken breasts for this, but chicken thighs or drumsticks will work as well. Although if you use chicken thighs or drumsticks, the cooking time will need to adjusted, because they both take longer to cook. The chicken is first marinated in olive oil and a mix of seasonings. The chicken is marinated in a large plastic bag for at least one hour, but can be marinated for as long as 24 hours. Bake the chicken for 25 minutes, before pouring barbecue sauce over the chicken and baked for another 15-20 minutes. You can also cook this chicken on an outdoor or indoor grill as well.
Baked Barbecue Chicken
Ingredients
- 1 pound skinless chicken breasts
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1 cup barbecue sauce
Instructions
- Preheat oven to 400 F. Cut chicken breasts in half and place them into a large plastic bag. Add olive oil, salt, pepper, garlic powder and paprika. Refrigerate and let the chicken marinate for at least one hour or overnight.
- Place chicken into a large greased baking dish. Bake for 25 minutes. Remove from oven and pour barbecue sauce evenly over the chicken.
- Bake for another 15-20 minutes.
