The cookie dough is made similar to a classic oatmeal cookie, except for the addition of mint extract and chopped up Andes mint candies. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart and bake until they are fully cooked through.

Andes Mint Oatmeal Cookies
Ingredients
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 1/2 cups quick oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 large egg
- 1 teaspoon mint extract
- 1 cup chopped Andes mints
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in the egg and mint extract and mix until smooth. Add in the flour mixture until combined.
- Fold in the Andes mints. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
