The cookie dough is made like a classic sugar cookie dough, except for the addition of chopped up Andes mints mixed into the cookie dough. Evenly press the cookie dough into a greased square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.
Andes Mint Cookie Bars
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chopped Andes mints
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined.
- Fold in the Andes mints. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
