Air-Fryer Chicken Fajita Egg Rolls

Cheesy egg rolls with a tex mex twist. Chicken fajitas are stuffed into egg roll wrappers and air-fried until crispy and cheesy.These egg rolls make a great appetizer or main meal. You can use leftover chicken fajita meat for this dish, or you can make the fajitas before. Making these egg rolls in the air-fryer make them crispy and delicious, without using any oil to make them.

The chicken fajita mixture is made just as you would make classic chicken fajitas. Leftover chicken fajitas would also work great for this dish. Evenly divide the chicken fajita mixture between egg rolls and top with shredded cheddar cheese. Roll up tightly into an egg roll. Air-fry the egg roll in batches until lightly golden browned.

Ingredients
  

  • 1 pound chicken, sliced
  • 2 tablespoons olive oil
  • 1 ( 1 oz.) packet fajita seasoning
  • 1 small onion, sliced
  • 2 bell peppers, sliced
  • 1 package egg roll wrappers
  • 1 cup shredded cheddar cheese

Instructions
 

  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook peppers and onion until softened. Remove vegetables from skillet. Heat the remaining olive oil in the skillet.
  • Add chicken and fajita seasoning. Cook until the chicken is no longer pink. Add the vegetables back into the skillet. Cook until everything is heated through.
  • Preheat air-fryer to 375 F. Evenly divide fajita mixture between the egg roll wrappers. Top with cheese, roll up tightly. Air-fry in batches for 10-12 minutes.
