Soft and chewy chocolate brownie balls with a chocolate caramel rolo in each bite. All covered in chocolate makes these sweet chocolate treats perfect for any occasion. These rolo balls are great for the holidays or to make for homemade Christmas gifts. You can even use a premade boxed brownie mix for the brownies instead to save on time and prep work. Store these bites in the refrigerator or freezer in an air-tight container.
For the brownies, you can either make your own homemade brownie batter, or you can use a box of premade brownie mix and bake it according to package directions. After the brownies have cooled down completely, crumble into a large ball. Roll the crumbled brownie into small bite-sized balls. Wrap around each rolo and set onto a plate. Chill the brownie bites in the fridge for at least 30 minutes. Meanwhile, melt the chocolate candy melts in the microwave until fully melted and smooth. Fully coat each brownie bite in the melted chocolate and let set on plates.
Rolo Brownie Bites
Ingredients
- 1 1/2 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 3 large eggs
- 1 cup butter, melted
- 1 teaspoon vanilla extract
- 24 rolos
- 16 oz. chocolate candy melts
Instructions
- Preheat oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking powder. Add in eggs, melted butter, and vanilla extract, whisk until smooth.
- Spread batter into a greased baking dish. Bake for 30-35 minutes. Let cool completely. Crumble into a large bowl. Roll mixture into balls, flatten slightly and place one rolo in each, wrap around each rolo. Set onto a plate. Refrigerate for at least 30 minutes.
- Melt candy melts in the microwave in 30 second intervals, stirring after each until fully melted and smooth. Dip each brownie ball into the chocolate. Set back onto plates. Let chocolate set.
