Greek Chicken Salad

Quick and easy healthy dinner that is perfect for the hot summer days. This easy chicken salad is made with tons of delicious Greek flavors, such as cherry tomatoes, and cucumbers. This meal is perfect for using up leftover chicken or a rotisserie chicken. And there is no need to heat the kitchen up, because other than the chicken no cooking is required. Serve with an easy olive oil and balsamic vinegar dressing.

The salad is made with lettuce, chicken, cherry tomatoes, cucumber, olives, and diced red onion. The dressing is made by combining olive oil, balsamic vinegar, minced garlic, and dried oregano. Just before serving, drizzle the dressing over the salad. This salad makes a great make ahead meal, mix all of the ingredients together in a large bowl, then cover and store in the fridge until serving.

Ingredients
  

  • 1 head lettuce, chopped
  • 1 pound chicken, cooked and diced
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1/2 cup sliced black olives
  • 1 small red onion, diced
  • 4 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano

Instructions
 

  • In a large bowl, combine chopped lettuce, cooked diced chicken, sliced olives, cherry tomatoes, cucumber, and diced onion.
  • In a small bowl, combine olive oil, balsamic vinegar, minced garlic, and dried oregano. Drizzle dressing over salad.
