Banana Pancakes

These easy and delicious fluffy pancakes are made with mashed banana mixed into the batter. It has a delicious slight banana taste that is not too overpowering. It is so quick and easy to make these fluffy pancakes. They taste great for a weekend breakfast or brunch, or you can even freeze them to heat them in the microwave during the week. Serve topped with butter and maple syrup.
The batter for these pancakes are so quick and easy to make. All of the dry ingredients are whisked together in a large mixing bowl. One large banana that has been mashed is added to dry ingredients along with eggs, melted butter, and milk. Whisk everything together until smooth. Ladle about 1/4 cup for each pancake onto a hot greased skillet. Cook until bubbles start to form on the pancakes. Flip and cook the other side until both sides are lightly browned.

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1 large banana, mashed
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 1/2 cups milk

Instructions
 

  • In a large mixing bowl, whisk together flour, sugar, salt, and baking powder. Add in mashed banana, eggs, melted butter, and milk. Whisk until smooth.
  • Heat a greased skillet or griddle over medium heat. Ladle pancake batter onto the hot skillet. Cook until bubbles start to form, flip and cook until the other side is lightly browned.
