Soft and chewy mint cookies topped with a chocolate hershey kiss. Mint and chocolate are a great flavor combination that always goes great together. These cookies are a great combination of a mint chocolate chip cookie and blossom cookie with a chocolate kiss on top. They are great for making during the holiday baking season, and are a fun way to bake with your family.
The mint cookie dough is made similar to a classic sugar cookie dough, except instead of adding in vanilla extract, peppermint extract is used instead. And green food coloring is added into the dough. Before baking, the cookie dough is refrigerated for at least one hour to keep them from spreading out too much. Roll the cookie dough into balls and place 2-inches apart onto ungreased baking sheets. After the cookies have baked, place one chocolate hershey kiss on top of each cookie and let cool completely.
Mint Chocolate Blossom Cookies
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon peppermint extract
- green food coloring
- chocolate hershey kisses
Instructions
- In a medium bowl, whisk together flour, salt and baking soda. In a large bowl using either a hand or stand mixer, beat softened butter with granulated sugar until fluffy.
- Add in egg and peppermint extract, beating until smooth. Add in flour mixture in three separate additions, beating after each addition until all of the flour mixture is incorporated. Cover and refrigerate cookie dough for at least one hour.
- Preheat oven to 350 F. Roll cookie dough into balls and place onto ungreased baking sheets 2-inches apart. Bake for 10-12 minutes. Remove from oven and place one chocolate kiss on each cookie.
