Flourless Peanut Butter Snickerdoodle Blossom Cookies

Soft and chewy classic peanut butter cookies made without any flour, and rolled in a delicious cinnamon sugar mixture. The cookies are also topped with a chocolate kiss on each cookie. Everyone will love the delicious peanut butter and chocolate flavors in these easy cookies.

The cookie dough is made by mixing peanut butter with granulated and brown sugars, an egg and vanilla extract until smooth. Roll each cookie dough into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large baking sheet and bake until they are fully cooked through. Remove from the oven and top with a chocolate kiss.

Ingredients
  

  • 1 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • chocolate kisses

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together peanut butter, both sugars, egg and vanilla extract until smooth. In a shallow dish, combine granulated sugar and ground cinnamon.
  • Roll the cookie dough into balls and roll in the cinnamon sugar mixture. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven and top with chocolate kisses.
