Easter M&M Pudding Cookie Bars

Soft and chewy cookie bars made with vanilla pudding mix and filled with Easter themed M&Ms. Everyone will love the soft and chewy texture of the cookie bars from the pudding mix and the delicious chocolate flavors. These easy cookie bars are perfect to bake this Easter.

The cookie dough is made similar to a classic sugar cookie dough, except for the addition of dry vanilla pudding mix whisked into the dry ingredients, and Easter themed M&Ms folded into the cookie dough. Evenly press the cookie dough into a greased square baking dish. Bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars.

Easter M&M Pudding Cookie Bars

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup Easter M&Ms

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the M&Ms. Press the cookie dough evenly into a greased 8-inch square baking dish. Bake for 20-25 minutes.
