Soft and chewy oatmeal cookies made with mint extract. Everyone will love the soft and chewy classic oatmeal cookie texture and the delicious mint flavors. These easy cookies make the perfect easy treat to bake for just about any occasion.

The cookie dough is made like a classic oatmeal cookie dough, except for the addition of mint extract instead of vanilla. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart and bake until they are fully cooked through.

Mint Oatmeal Cookies

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon mint extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in egg and mint extract and mix until smooth.
  • Add in the flour mixture and mix until it is fully combined. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
