Mardi Gra Peanut Butter Cookies

Easy chewy peanut butter cookies rolled in purple, green and gold sanding sugars. Everyone will love the soft and chewy texture of the cookies and delicious peanut butter flavors. They make the perfect easy treat to bake this Mardi Gra.

The cookie dough is made like a classic peanut butter cookie dough, it is then rolled into balls and rolled into purple, gold and green sanding sugars. Place the cookies onto a large ungreased baking sheet. Bake until they are fully cooked through.

Mardi Gra Peanut Butter Cookies

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • purple, green and gold sanding sugars

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter, peanut butter and sugar until fluffy.
  • Add in egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined. Place each sanding sugar into a shallow dish. Roll the cookie dough into balls and roll in the sanding sugars.
  • Place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
