The cookie bars are made like a classic gingerbread cookie dough, except for the addition of cocoa powder added to the cookie dough. Press the cookie dough evenly into a greased square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.
Chocolate Gingerbread Cookie Bars
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1/4 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 F. In a medium bowl, whisk together flour, cocoa powder, salt, baking soda, cinnamon and ginger. In a large bowl, mix together butter, sugar, and molasses until fluffy. Add in egg and vanilla extract and mix until smooth.
- Add in the flour mixture and mix until it is fully combined. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
