Chocolate Gingerbread Cookie Bars

Soft and chewy chocolate cookie bars with molasses, ground cinnamon, and ground ginger. Giving the chocolate cookie bars a delicious warm gingerbread flavor that everyone will love. These easy cookie bars make the perfect easy treat to bake this winter.

The cookie bars are made like a classic gingerbread cookie dough, except for the addition of cocoa powder added to the cookie dough. Press the cookie dough evenly into a greased square baking dish and bake until the center comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Chocolate Gingerbread Cookie Bars

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, cocoa powder, salt, baking soda, cinnamon and ginger. In a large bowl, mix together butter, sugar, and molasses until fluffy. Add in egg and vanilla extract and mix until smooth.
  • Add in the flour mixture and mix until it is fully combined. Evenly press the cookie dough into a greased 8-inch square baking dish. Bake for 20-25 minutes.
