Juicy meatloaf with a spicy flavor from hot sauce and taco seasoning. This meatloaf has all of the flavors a spicy taco, in the form of a classic meatloaf. All topped with cheddar cheese for an easy cheese tex-mex meal. Only six ingredients are needed to make this spicy meatloaf. Just beef, egg, hot sauce, tortilla chips, taco seasoning and cheese to top the meatloaf with. Serve with potatoes and your favorite vegetables for an easy dinner.

This meatloaf is prepared similar to a classic meatloaf, but instead of breadcrumbs being used, crushed tortilla chips are used instead. And hot sauce is used instead of ketchup. The meatloaf is seasoned with taco seasoning. Form the meatloaf into a loaf shape and place it into a greased loaf pan. Bake for 1-1 1/2 hours or until the meatloaf is no longer pink in the center. Sprinkle the top with shredded cheddar cheese and bake for a few more minutes, or until the cheese has melted.

Taco Meatloaf

Ingredients
  

  • 1 pound ground beef
  • 1 large egg
  • 1/2 cup hot sauce
  • 1 cup crushed tortilla chips
  • 1 ( 5 oz.) packet taco seasoning
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. In a large bowl, combine ground beef with egg, hot sauce, crushed tortilla chips, and taco seasoning. Form mixture into a loaf and place into a greased loaf pan.
  • Bake for 1 hour- 1 1/2 hours. Remove from oven and top with shredded cheddar cheese. Bake for another 5 minutes.
