Chocolate Cake Mix Andes Mint Cookie Cups

Soft and chewy chocolate cookie cups made with a box of chocolate cake mix and filled with chopped up Andes mints candies. Everyone will love the soft and chewy texture of the cookie cups and the delicious mint and chocolate flavors. They are perfect to bake this holiday season.

The only four ingredients that you need is a box of chocolate cake mix, eggs, vegetable oil, and chopped up Andes mints. Mix all of the ingredients together until smooth. Evenly divide the cookie dough between a paper lined muffin pan and bake until each cookie cup comes out clean with a toothpick.

Ingredients
  

  • 1 ( 15 oz.) box chocolate cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup chopped Andes mints

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Fold in the Andes mints.
  • Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
