Peppermint Patty Stuffed Grinch Sugar Cookies

Easy soft and chewy sugar cookies made green with food coloring, and with a chocolate peppermint patty candy stuffed inside of each cookie. Each cookie is also topped with a mini heart shaped sprinkle. Everyone will love the soft and chewy texture of the cookies and the delicious chocolate peppermint surprise.

The cookie dough is made like a classic sugar cookie dough, except for the addition of food coloring. Roll the cookie dough into balls and place one peppermint patty in each cookie and roll into balls. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake until the cookies are fully cooked through. Remove from the oven and top with a heart sprinkle.

Peppermint Patty Stuffed Grinch Sugar Cookies

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • green food coloring
  • peppermint patties
  • heart sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, mix together butter and sugar until fluffy. Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined.
  • Add in the food coloring. Roll the cookie dough into balls and flatten slightly, place one peppermint patty in each cookie. Roll into balls and place onto a large ungreased baking sheet at least 2-inches apart.
  • Bake for 10-12 minutes. Remove from the oven and top each one with a heart sprinkle.
