Reese’s Peanut Butter Cup Stuffed Cake Mix Monster Eye Cookies

Soft and chewy sugar cookies made with a box of cake mix and filled with Halloween themed sprinkles. Each cookie is stuffed with a chocolate Reese’s peanut butter cup and decorated with candy eyes for Halloween. Everyone will love these easy soft and chewy cookies this Halloween season.

The cookie dough is made by mixing a box of cake mix with eggs and vegetable oil until smooth. Purple food coloring is mixed into the cookie dough until it is fully purple. Fold in sprinkles. Roll the cookie dough into balls and flatten each one slightly. Place one peanut butter cup in each cookie dough and roll into balls. Place onto a baking sheet and bake until the cookies are fully cooked through. Remove from the oven and top with candy eyes.

Ingredients
  

  • 1 ( 15 oz.) box white cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • purple food coloring
  • 1/2 cup Halloween sprinkles
  • mini Reese's peanut butter cups
  • candy eyes

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Add in the food coloring until fully purple. Fold in the sprinkles.
  • Roll the cookie dough into balls and flatten slightly. Place one peanut butter cup on each cookie dough and roll into balls. Place cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes. Remove from the oven and top with candy eyes.
