Soft and chewy peanut butter cookie cups with oatmeal, chocolate chips and M&Ms. Along with a box of dry vanilla pudding mix. Everyone will love the soft and chewy texture of the peanut butter cookie cups and the delicious classic monster cookie flavors. They make the perfect treat for any occasion.

The cookie dough is made like a classic monster cookie dough, except for the addition of vanilla pudding mix. Evenly divide the cookie dough between a paper lined muffin pan. Bake until each cookie cup comes out clean with a toothpick.

Monster Pudding Cookie Cups

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 cup quick oats
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup M&Ms
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, oats, pudding mix, salt, and baking soda. In a large bowl, mix butter with peanut butter, granulated sugar and brown sugar until fluffy.
  • Add in the egg and vanilla extract and mix until smooth. Add in the flour mixture and mix until it is fully combined. Fold in the chocolate chips and M&Ms. Evenly divide the cookie dough into the paper liners. Bake for 12-15 minutes.
